Rainbow Trout has been successfully farmed for many years. Its name comes from its stunning colours, which run down the length of the fish. It has a soft texture and milder flavour to salmon.
Cook it: Why not cook it whole! Add olive oil, crushed garlic, a dash of lemon juice and fresh herbs. Wrap in foil before baking in the oven.
